Christmas Shortbread Cookies
For this easy and delicious recipe,
You will need:
3oog plain flour
200g softened butter
100g caster sugar
vanilla extract/ essence
Method:
In a bowl, rub together the butter and flour to get a crumbly consistency. Work in the caster sugar and vanilla to form a dough. Wrap the dough in cling film and chill in the fridge for an hour. Once chilled, you can now preheat the oven to 130c and then roll the dough out to your preferred thickness. I used star and snowflake cookie cutters. I then popped them in the oven for 20 minutes until they turned a pale golden colour. I dusted some icing sugar over the stars and royal iced the snowflakes.
For the royal icing you will need:
1 cup of icing sugar
1 egg white
1 tsp cold water
